I hope we all had a nice weekend. I traveled down to my roots in NH to get one last summer visit in before the craziness of fall and the school year take up my sanity.
Which included a baseball game and a classic ballpark treat.
We snagged some sweet suite seats (I went there), which included a catered spread of eats, and two free drink tickets. Score!
I'm not big into beer anymore, so I stayed classy and had two glasses of wine to go with my new favorite way to eat ice cream.
I blame my bladder for causing me to miss the cart of free ice cream that rolled in, since it was gone by the time I came back from the bathroom. Luckily my bro was nice enough to give me the rest of his...after he ate all the good stuff.
Which is when the brilliance came to me. I snagged some popcorn from Papa John, slapped it on, and made history. Sweet. Salty. Crunchy. Buttery. Life is changed.
And speaking of life changing sweet and salty goodness...
I've got a treat for you today!
It all started once I dug my hands into a jar of these Blue Diamond Salted Caramel almonds.
Like within two seconds of getting the package I was already experiencing their glory. They tasted exactly like caramel without the tooth-extracting stickiness.
After seeing these Nutella brownies on Buzzfeed, I knew I wanted to try my hands a more fun version.
Because we all know blondes have more fun. 😉

3 Ingredient Salted Caramel Blondies
- Yield: 6 blondies 1x
Ingredients
- 1 (6 oz) jar salted caramel almonds
- 1 medium egg
- ¼ cup oat flour (or flour of choice)
Instructions
- Preheat oven to 350 degrees
- Spray loaf pan with non-stick spray. Set aside.
- Add almonds to a food processor, and process until smooth and creamy. ~3-5 minutes.
- Transfer almond butter to a large bowl.
- Add egg and flour, and stir to combine.
- Spoon mixture into prepared pan evenly.
- Bake 12-15 minutes, or until edges start to brown.
- Let cool before cutting and serving.

Now you could get jazzy, and add some more chopped nuts, chocolate chips, or I dunno...a drizzle of caramel sauce. But who am I to tell you how to eat your dessert.
I'm a simpleton, and prefer my blonde straight up with an almond milk chaser. Sounds like a balanced breakfast treat to me.
