    This 2 ingredient frozen hot chocolate is a quick and easy way to get your sweet fix, with only 100 calories per serving!

    Morning friends!

    Whadda weekend! Saturday I spent the day feeling like the biggest kid WITH the biggest kid, Papa John.

    Oh man, did I have fun. On a serious note, no one who lives in New England should have a gym membership. Just find a hill and climb through two feet of snow a few times. It will put that stairmaster that you pretend to know how to use to shame.

     

    After a couple more inches of snow overnight, Sunday turned into a heatwave!


     

    The sun was shining. The snow was melting. A gorgeous 37 degrees felt like a day at the beach after all this blizzard blasphemy we've been having. So I took full advantage of the day, cranked up the feel good tunes, and took a nice long walk. IN A SWEATSHIRT.

    It feels like winter will FINALLY be over...if it wasn't for that meddling groundhog!

     

     

    But seriously the sun does wonders. It put me in such a good mood, that I just wanted to pick up that snow and give it a big smooch.

     

    ..But remembered snow is in fact still cold and I ran the chance of appearing as crazy as I actually am. I think I made the right decision.

     

    I spent the rest of the day meal preppin' for the week ahead, and watching Maleficent.

    Sad story, I had no idea this was about Sleeping Beauty. I was totally #TeamCinderella.

     

    Oh, and enjoying an icy cold mug of...Hot Chocolate?

    I guess this heatwave went to my head, when I start turning my hot bevs into ice cream.

    As part of the Blue Diamond bloggin' team, we got to test out their unsweetened vanilla almond milk. While I usually use it for my once a week smoothie (I'm trying), and splashing in my coffee..er tea for the next few weeks (lent), but I wanted to do something a bit different this time 'round.

    I was inspired by the ever-talented Miss Katie, and my love for hot choco.

    Did you know there's a difference between hot chocolate and hot cocoa?

    Hot cocoa is made with milk and cocoa powder, and hot chocolate is made with bits of chocolate and cream. Bam. You're welcome.

    Since this was a little bit more icy than ice cream, I couldn't bring myself to crown it worthy of my third favorite food group..besides peanut butter and carrots.

    It reminded me of the days, playing outside in the snow for hours, and finding mugs of hot cocoa waiting on the front porch. Where my brothers and I would dump a giant dollop of snow in to cool it down. Scientifically proven best way to enjoy hot chocolate..or cocoa. Aww screw it!

    Ingredients

    Units Scale
    • 1 cup unsweetened almond milk
    • 1 packet hot chocolate mix

    Instructions

    1. In a microwave-safe measuring cup, heat almond milk in microwave for 2 minutes.
    2. Stir in hot chocolate mix until combined.
    3. Pour mixture into an ice cube tray, and freeze until solid.
    4. Transfer milk cubes to a high powered blender and blend until mixed.
    5. Transfer to mug & enjoy!

      I am not a huge chocolate person! Is there hot white chocolate?? LOL! Oh wait, is white chocolate chocolate? I FAIL! 😉

      And um, I won't lie to you, I was cold yesterday in LA and I think it was about 60 degrees, LOL!! Pathetic!!
