10 Minute Chicken Caesar Soup


Units Scale
  • 1 teaspoon olive oil
  • 4 cups chopped kale
  • 1 clove garlic, minced
  • 2 cups chopped cooked chicken breast
  • 3 cups Progresso chicken stock
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup light Caesar dressing
  • additional Parmesan cheese
  • croutons (optional)


  1. Heat a medium stockpot over medium heat. Add oil.
  2. Add chopped kale, and sauté for 3 minutes.
  3. Add garlic, and cook an additional 30 seconds.
  4. Add chicken and stock, and bring to a boil.
  5. Reduce heat to low, and add in dressing and cheese.
  6. Remove from heat, and serve.
  7. Top with additional Parmesan cheese, and croutons if using.
