Not casual jeans. Or Hawaiian shirt Friday. Just Friday. It always fits me, and hear it’s the new black…but this is coming from the girl who knows the inside of the produce section better than the inside of the mall. Fashionista definitely isn’t my superlative.
But do you know what tomorrow is???
…well yes. It IS saturday. But not just any fun-lovin’ saturday. It’s National Hummus Day!
I alluded to this on Monday’s post, but tomorrow is THE day folks. And what better way to dive headfirst into the holiday than with a pool of cheesy hummus-y dip!
Pimento cheesy hummus-y dip that is. Pimento cheese…either you love it, or you’re not from the South. 🙂
I spent my dietetic internship in Alabama for year, when I was still vegetarian at the time. LOL right? A veggie-lovin’ Yankee in BBQ country. I really should have been a sitcom.
Needless to say, a lot of the options were not so veggie-friendly…except for my savor of pimento cheese.
I had never had it before, and was all about trying the local fare and ended as a pimento cheese lovin’ dietitian after it all.
In case you fall into the other category, pimento cheese is pretty much cheese mixed with diced pimento peppers and mayo. What’s not to love?! I really think I should have gotten a shirt when I left ‘bama that said, “I went to the South, and all I got was a love of pimento cheese.” Surprisingly, I couldn’t find them anywhere…
But in the name of chickpea love, I swapped a bit of the South out for some of my past vegetarian ways. And we all lived happily ever after.
There may not be any actual pimentos in this pimento cheese, but there is roasted red peppers which are pretty much the same thing with a mistaken identity. Swapping out the mayo not only trims this recipe out a bit, but also had the power couple of fiber and protein that mayo and cream cheese have serious relationship goal envy on.
And it just tastes damn good. Isn’t that what life is really about now? I do think I need to market a new shirt now though… “I tried pimento cheese and all I got was a newly sparked love with hummus.” You’d buy one, right?
- ½ cup shredded sharp cheddar cheese
- ½ cup shredded jack cheese
- 1 cup Sabra roasted red pepper hummus
- 1 tablespoon Dijon mustard
- 1 teaspoon hot sauce
- ¼ teaspoon garlic powder
- ¼ teaspoon paprika
- In a small bowl, combine all ingredients until mixed.
- Serve with crackers, fresh veggies, or pretzels.
