Hi Ho Wednesday folks!
Can we reel back this holiday season a littttle bit right meow. I feel like Christmas is already half over at this point. WHOMP.
But on the bright side, today is the best day of the week
…when it comes to oversharing daily meals on the internet.
You know it’s a good day when you start off by convincing a group of 4th and 5th graders that putting spinach into a smoothie isn’t as puke-worthy as their drama made it out to be. There may have been 3 types of fruit in there, but spinach smoothies still were approved!
So then I made my own rendition in a (chipped) bowl form.
Lotsa frozen berries, a scoop of vanilla protein powder, ground flax, and shredded coconut atop. Yes, sweetened because unsweetened coconut tastes like sawdust.
Let’s play a game and see if you can find the hidden salmon patty amongst the sea of roasted cauliflower…

Chased by a couple of clementines, because all the citrus and vitamin C to avoid the plague this winter.
Pre-Christmas light and gingerbread house shopping snackage happened.
Some plain Greek yogurt mixed with a few drops of liquid stevia and chunky peanut butter, because studies say it heals all wounds. Non-existent wounds, not literal. Don’t sue me brah.
After three days of mishaps, our tree can now stand straight on it’s own, and is illuminated. They grow up so dang fast lemme tell ya.
Day deux of my HelloFresh trial is a success with this Argentinian style cod with chimichurri and sauteed zucchini and tomatoes and wild rice medley. A big upgrade from my usual “throw it on some lettuce with Dijon” style dinners.
And my daily vitamin C supplement.
