Ah yes. Nothing is better than welcoming a new life into the world, and starting another chapter of one (I seriously typed wine instead of one the first time. How many have I had already?) than with booze.

Especially cocktails that involve wine, frosty cups, and summer fruits. I don’t know exactly what the summer has planned for me, but I know that it is going to involve LOTS of these poolside.

If you haven’t heard of frosé before, it’s one of the latest white girl trending recipes involving frozen rosé wine. If this is basic, than call me a white T, cuz I am all about this.

Watermelon Frosé

Serves: 4 servings
 
Ingredients
  • 1 (750 ml) bottle rose wine
  • 2 cups watermelon, cubed
  • 1 cup honeydew melon, cubed
  • juice from 2 limes
  • ½ cup lime seltzer
  • 3 ounces watermelon vodka (optional)
Instructions
  1. Pour rose into 2 ice cube molds and freeze at least 4 hours or overnight.
  2. Place watermelon and honeydew on a baking sheet or plate, and freeze at least 4 hours or overnight.
  3. Add frozen watermelon, juice from one lime, ¾ of frozen rose cubes, ¼ cup seltzer, and vodka id using to a blender. Blend on high until smooth.
  4. Pour into 4 glasses.
  5. Rinse blender, and add remaining rose cubes, lime juice, and seltzer.
  6. Blend on high until smooth.
  7. Spoon on top of watermelon mixture in each glass.
  8. Garnish each with a wedge of watermelon, and enjoy!
Notes
*Make non-alcoholic by doubling watermelon and honeydew, and leaving out rose and vodka.

I’m beginning to think that whole if you don’t use it, you lose it sentiment has some truth to it.

Since sugar has gradually made it’s departure out of my daily life aside from fruit, I find myself on the savory side of things more often than sweet.

Don’t get me wrong, I’m not one to turn down an ice cream cone (especially soft serve twist) or a fresh baked chocolate chip cookie still gooey from the oven. I still craving something sweet after meals. But I find I’m satisfied with a piece of fruit or just a bite of something sweet instead of uncontrollably bingeing on whatever lay in front of me.

 I also find my energy levels more stable when I reach for something with more protein, fat or both in it. Banana WITH peanut butter. Almonds AND a hard-boiled egg. Oats WITH hummus.

I know, hang in there with me. If you haven’t figured out most of the recipes on here err on the side of out there, you’re in for a rude awakening.

Hummus and veggies. Hummus and whole grain crackers. Spread on a sammy instead of mayo. Been there, done that. While still delicious, I wanted to show the more adventurous side of this brave little chickpea spread for this month’s Recipe Redux contest with Sabra.

I’ve seen some more savory snack bars out there, which makes my heart swoon, but y’all know I’m in favor for the ball or bite form when it comes to snacks.

Plus, it’s kinda like having one giant chickpea. Or a chickpea pinata filled with texture, flavor, and kazoos.

Did you know that National Hummus Day is a thing? It’s a thing. And it’s happening May 13th. Plenty of time to make some giant chickpea pinata no bake energy bites, and yummus the hummus in unity.

I used different spice blends to roll my bites in, which is completely optional, but I like having options. These are completely versatile too, which is something I love in a snack. You can make the same thing, but have it be completely different just by changing the flavor hummus you use, the different nuts or seeds you add, or what seasoning you roll it into. The snowflake of snacks, no two are exactly alike. I a-like that. 🙂

But one that has been in the post archives for a good year now. So what better way to bust it out of the vault like a Disney movie than during national flippin’ SALAD MONTH?!

It’s a thing. I didn’t make it on my own. But I should have at least been on the voting committee since 2 a day salads are the norm for me most days. Not bitter at all though.

I’m usually not one for creamy dressings..or dressings at all most days. Usually mustard or salsa is a standard fill-in for dressings on my many a meal salads, despite my best intentions of making my own.

That is until I had parmesan peppercorn dressing. It’s creamy, but has that peppery hand to the face bite that regular ol’ ranch can’t give me. So I knew I had to make it my own, and of course invite Greek yogurt to the non-Cinco de Mayo related fiesta.

You can use full-fat, non-fat, kinda chubby, or any yogurt that you so desire. I used non-fat cuz that’s what I had on hand, but since full-fat is pretty much sour cream to me anyways, I bet it would make a fine stand-in for it in this recipe.

But just don’t let salad month kill your vibe on this. It’s a perfect dipping companion for raw and cooked veggies alike, and I wouldn’t even put it past me to slather a spoonful on a sammich. Maybe even dip your slice of pizza if you’re one of them folks.

But while we’re here, why not put it on a taco or tortilla chip. I won’t judge. 🙂

Greek Yogurt Parmesan Peppercorn Dressing

Ingredients
  • 1 cup plain Greek yogurt or Skyrr ( I used Siggi's)
  • ¾ cup low-fat milk
  • 1 tablespoon apple cider vinegar
  • 1 clove garlic, minced
  • 2 tablespoons chopped parsley
  • ⅓ cup grated parmesan cheese
  • 1 teaspoon lemon juice
  • ½ teaspoon salt
  • 1½ teaspoons fresh cracked black pepper
Instructions
  1. Add all ingredients to a mixing bowl or mason jar with lid.
  2. Whisk together until smooth.
  3. Store in refrigerator for up to 5 days.
