As many of you may know I recently started incorporating meat back into my diet after being a vegetarian for about 9 years. You can read the whole story of why I decided to here.
While chicken is still my tried and true fallback, I try to incorporate beef into the rotation at least every couple of weeks, since it’s one of the greatest source of iron. There is some significant research that shows eating high-quality protein within calorie goals can help you lose and/or maintain a healthy weight, and support a healthy metabolism.
Some of the more remarkable benefits of eating protein throughout the day include feeling satisfied after a protein-packed meal, which helps reduce mindless eating as well as helps build muscle and reduce body fat. You can find more about the research and benefits here.
I find myself still pretty intimidated when it comes to making meat-based dishes that I don’t just throw in a crockpot and hope for the best. So I knew I had to make something simple enough, that even a converting vegetarian could do it.
When I think beef I think burger. I never find myself craving a giant steak, but there’s something about the scents of a a fired up grill during the summer that makes me want a burger RIGHT NOW.
And loaded baked potatoes are just plain delicious. And epic. Epically delicious.
I actually think the tater looks like a bun, and I may or may not have treated it as such, and manhandled that cheeseburger loaded baked potato like a boss. Let’s just say I’m glad you weren’t there to find out the answer.
