Happy Halloween my friends!

The scariest part of today will probably be the fact that I’m running on little sleep and I’ve only had one cup of coffee thus far. My class of kiddos this morning will see just what the living dead actually looks like….

While some are passing out bowls of candy, others are already singing Christmas carols. Choose your squad wisely.

I’m amongst those all eye roll emoji at all the holiday commercials between the Exorcist, and lighted trees next to the blow up ghosts on harleys. Thanksgiving however, is in da buildinggg!

The Ultimate Quick & Easy Salmon Patty Recipe -- A super fast and inexpensive way to get your salmon fix. No breadcrumbs required! Gluten-free & Paleo-friendly

I’m currently typing this at 6 PM, and the sun is still beaming it’s shiny little face. I’d like to call that the unofficial commencement of Spring. How did I manage to survive this winter unscathed?! May those not be my famous last words…

While I may have slept in to a painstakingly late 8AM this morning, my entire day wasn’t horribly shot since it started with the only acceptable breakfast on a Sunday morning.

Cheeseburger Loaded Potato

As many of you may know I recently started incorporating meat back into my diet after being a vegetarian for about 9 years. You can read the whole story of why I decided to here.

While chicken is still my tried and true fallback, I try to incorporate beef into the rotation at least every couple of weeks, since it’s one of the greatest source of iron. There is some significant research that shows eating high-quality protein within calorie goals can help you lose and/or maintain a healthy weight, and support a healthy metabolism.

Some of the more remarkable benefits of eating protein throughout the day include feeling satisfied after a protein-packed meal, which helps reduce mindless eating as well as helps build muscle and reduce body fat. You can find more about the research and benefits here.

I find myself still pretty intimidated when it comes to making meat-based dishes that I don’t just throw in a crockpot and hope for the best. So I knew I had to make something simple enough, that even a converting vegetarian could do it.

When I think beef I think burger. I never find myself craving a giant steak, but there’s something about the scents of a a fired up grill during the summer that makes me want a burger RIGHT NOW.

And loaded baked potatoes are just plain delicious. And epic. Epically delicious.
