3 DAYS LEFT TIL CHRISTMAS!!!

And working from home for the week means I’ll be 99.9% productive at being distracted and procrastinating.

 

Like I am doing right now...work? or pinterest? you decide.

But that’s okay, because I had the best weekend ever! And by ‘ever’ I mean in a few weeks.

 

Besides taking a stretch limo to dine on escargot and fireball a la my work Christmas party..

I visited Nana for my third lesson in fudge making. Instead of giving me the straight up recipe, there are steps that need to be done firsthand to master it. I have a few more years of practice to master Nana’s 40+ years of perfect fudge production.

 

Meanwhile, Mr. Nutcracker and I will keep guard over the stash.

We also made a batch of fresh cinnamon raisin bread, now that Nana has been on a bread making kick. Totally glutenous and totally delicious fresh out of the oven and buttered.

And another addition to the 12 Days of Giving Arsenal! Cookies are so overrated as gifts. Your french toast will thank me, neighbors.

 

I also went to Papa John’s for dinner, a Christmas movie, and visiting this light spectacle down the street.

Now the holidays are infamous for decadence, overindulgence, and eggnog. LOTS of eggnog. Especially from moose mugs.

 

 

I love me some nog, but find it to be a little too rich to down a full glass of. A splash of it in a cup of coffee is mighty fine though.

 

The loads of sugar and calories doesn’t exactly make eggnog the epitome of health either, but what if you could have it even for BREAKFAST?!

Eggnog Chia Pudding {Vegan}

Ingredients
  • 1 cup unsweetened vanilla almond milk
  • ¼ cup chia seeds
  • 1½ tsp rum flavoring
  • 2 packets stevia (or sweetener of choice)
  • ¼ tsp nutmeg
  • ¼ tsp cinnamon
Instructions
  1. Combine all ingredients in a small bowl.
  2. Cover, and refrigerate at least 1 hour, preferably overnight.
  3. Top with additional nutmeg and cinnamon if desired.
  4. Enjoy!

 

If you’re really going for that eggnog look, you can substitute black chia seeds for the white variety, and even give it a whirl in a blender for a smoother texture. Either way, it makes for a healthier nod to your nog!
