While I was resting my screen time weary eyeballs before they melted out of my head, I took a long podcast-fueled walk to get some movement in.

I also sat down to the first family dinner at my house in at least a year. A Dijon broiled salmon, roasted asparagus, and mashed sweet potato dinner was sure a good reason for it though.

Low-Carb Spinach Wrap

Ingredients
  • ¼ cup frozen spinach, thawed, drained
  • 1 large egg
  • 2 Tbsp flaxseed meal
  • 1 Tbsp water
  • ¼ tsp baking powder
  • ¼ tsp garlic powder
  • cooking spray or olive oil
Instructions
  1. Coat a 8 or 9 inch glass pie dish with cooking spray or oil. Set aside.
  2. In a small blender or food processor, combine remaining ingredients.
  3. Spread mixture evenly in prepared dish.
  4. Microwave 3-4 minutes, or until firm and cooked through.
  5. Let sit 1-2 minutes.
  6. Coax wrap out of pan with a rubber spatula.
  7. Fill with desired fillings & enjoy.

 

I packed mine full of more veggies with cucumber, zucchini, and shredded carrots, and buffalo hummus, and made such a light but filling lunch.
