Gettin’ jiggy wid it (nana na nananana nana na nana na!). Woop. Sorry. Still groovin’ from yesterday’s post. Remember that time when Will Smith was still a singer? Weird.

 

I’m happy to say that today is the official last day of my 21 day restore! I will fill you in on all the deets soon, but the one thing I am so glad to be reunited with is the real deal COFFEE! I’m sure I’ll have the next 3 week’s blog posts done by 7 am tomorrow morning.

I’m no stranger to the politically correct term of “bites”. First was Oatmeal Raisin…

Then just in time for Fall with Pumpkin Cranberry

And the fact that I’m always drooling over Lindsay’s world renowned flavors of bites.

 

So I thought long and hard about what little bite of perfection I wanted to make this time. While I totally could have went the pumpkin route for the upcoming Fall, I wanted to savor the last bite (waka waka) of Summer we have left. Because you know what they say…”First comes Fall. Then comes pumpkins. Then comes DEATH.

So while the sun is still shining and I can actually drink fluids that aren’t heated up in the microwave, I’ll milk it for all it’s worth.

 

And what better way to think of warm weather and sunshine then of Key West. I had the pleasure of popping into this little gem of a place back in High School on a cruise, and it was hard to believe I was still actually in the states.

Fun fact: I had to navigate through Myspace to get this picture. Like woah. I think I could find my way out of straight jacket faster than I could figure out how to use this page. I’m sure they were happy to see another person on there other than Tom.

 

What was my favorite part you ask? Like you reallllly have to ask me that. The food of course! And what else do you eat in The Keys other than Key Lime Pie!

Yeah I know this isn’t a slice of pie, but I think you can pick up what I’m putting down. Balllllistic Bites of key lime pie-ness!

 

They’d be delish just as is. But wait, there’s more! These ba….bies are also gluten-free, paleo, vegan, and DAIRY FREE!

Now if you’re planning on packing these in Jimmy’s lunch box for the first day of school, these DO contain nuts and coconut, so they’re not exactly allergy-free. Check the school’s policy on if nuts are allowed before they go nuts ( i had to) on you for bringing in an anaphylaxis bomb. Or you could be greedy like me (if I even had kids) and save them for your own Strawberry Shortcake lunchbox.

Key Lime Pie Bites

Gluten & Dairy Free, Vegan, Paleo
Ingredients
  • ½ cup almonds
  • ½ cup macadamia nuts
  • 6 dates, pitted
  • 1 tsp vanilla
  • 1 T lime juice
  • ¼ cup finely shredded, unsweetened coconut
  • 1 packet True Lime (or 1 tsp lime zest)
Instructions
  1. Combine almonds and macadamia nuts in a food processor.
  2. Process until crumbly.
  3. Add dates, vanilla, and lime juice.
  4. Process until dough forms, scraping sides of the bowl as you go.
  5. Transfer mixer to a bowl, and refrigerate for 30 min.
  6. Combine coconut and True Lime or lime zest in a shallow dish.
  7. Dip fingertips in a cup of water and roll dough into 9 balls, wetting fingertips each time.
  8. Roll each ball in coconut.
  9. Store in air tight container in fridge for up to 1 week.

 

I used macadamia nuts to gives a more tropical feel, not to mention it has the highest omega 3 and lowest omega 6 ratio of fats out of all the nuts…meaning they have more of the healthy fats we need, and less of the ones we already get too much of.

With just enough sweetness from the dates, and the pucker power of the lime, these are the perfect snack for when you want to pretend you are on an island far far away from back to school shopping and figuring out what bus your kid is supposed to take. Until I have that problem, I’ll just enjoy these for simply being delicious.
