Good morning to you from Tokyo, to Mexico, to RIO! Can you tell I’m a little obsessed with Katy Perry’s new album? Such fun and upbeat songs I tell ya. Just what I need when it’s a 10 degree windchill in an iced over car.
Instead of heated seats, they should just invent heated pants already. Granted the phrase “Liar, liar pants on fire” seems like it would become a reality pretty quickly, but I just can’t stand being cold. So long sweet fall and your warm afternoons. I’ll remember you with every pumpkin-spiced cookie, tea, coffee, pancake..ok you get the point.
In weekend news, I spent most of my Saturday with MJ as we started Christmas shopping trying to avoid the crowds. I guess 1500 people had the same idea since traffic was backed up all the way towards the mall. At least we avoided that madhouse and stuck with the stores on the outskirts around the mall. We ended up mostly getting each other’s gifts which is always the real goal when you go holiday shopping right? Better to know you’re getting something you like if you ask me. I’m sure Santa will have a few surprises waiting under the tree anyway.
Since I ran out of daylight before I could get out for a run on Saturday, I thought about going on Sunday. Keyword: Thought. It was soo windy and about 20 degrees out which was a big flashing neon sign for me to stay warm and toasty inside all day instead.
I did work up a sweat with Jillian’s 30 Day Shred to rack up some fitness points for the day. Then I cranked up the heat in the kitchen testing out some of the many goodies I got to review for True Lemon.
I first heard about True Lemon a few years back, and finally got my hands on some down South when I hosted my very first giveaway which taught me a lot about what goes in to making a giveaway more of a success.
True Lemon was created by founder and pro chef David Schleider as an all-natural and convenient alternative to fresh lemon juice which has expanded into a variety of products for the True Citrus line.
I kept in touch with the company because of how much I enjoyed their products and all that they did related to Nutrition. I would spend hours just browsing through their site because they have their own company nutritionist, Diane Henderiks! More on that in a little bit.
The folks at True Citrus were so generous and sent me quite the collection of products they offer, which I was more than happy to get my hands, water, and baked goods on!
First up were the True Lemon, Lime, and Orange for Cooking, Baking, and Beverages. Each packet is equivalent to about a 1 T of juice for a calorie-free and sweetener-free burst of citrus for any dish.
MJ made a batch of lemon poppy seed bread so I added a packet of the lemon to it and used another to make a lemon glaze for the top. I was surprised how much of a punch 1 packet had to a whole loaf of bread! If you couldn’t tell… we hated it..
Next up were the Raspberry Lemonade, Original Lemonade, Mango Orange, Black Cherry Limeade, and True Grapefruit. What a glass full! All of these are designed to be added to water for a very low calorie (10 calories or less) and artificial and sugar free way to spruce up your run of the mill high quality H20.
It’s really hard to pick my fav, but the peach lemonade and original are up there. As much water as I drink throughout the day, I love having a way to jazz it up once in a while. Especially now that the weather is colder, and 90% of my beverages have to be steaming for me to drink them, having a flavor helps me gulp down a nalgene full when I’m too impatient for hot water.
I’ve also been good about staying away from artificial sweeteners, except for my relapse with Trident, but I can feel good about drinking theses since they’re sweetened with stevia and don’t have that chemically sickening sweet aftertaste that some artificial sweeteners can leave behind.
Last but not least were the shakers for cooking, baking, and seasoning. I’ll be seasoning for months with the original Lemon and Lime shakers, plus a Lemon Pepper, Orange Ginger, and Lime Garlic & Cilantro variety.
These are a great salt-free seasoning for pretty much everything and anything. Like Mrs. Dash’s younger and better looking sister. And let me tell you, a little goes a long way. A dash is quite literally all you need to perk up your side of veggies, salads, meats, fish, and infinity and beyond! I tried these in a lot of sides, and since I’m still on a salad every day kick, adding a sprinkle is a nice change to my usual balsamic or spicy mustard.
Besides ranting and raving about all these, I thought I would share a little recipe with you that takes almost no effort to whip up. I used the Lime Garlic & Cilantro shaker to make a light but filling dinner or Cornmeal Crusted Haddock. Having all the seasoning in one shaker makes it so easy even your four legged friend could do it.
- 2 large haddock filets
- 2-3 T yellow cornmeal
- True Citrus Lime Garlic & Cilantro seasoning, to taste
- Preheat your oven to 375 degrees, and like a baking sheet with aluminum foil.
- Spray with nonstick spray and set aside.
- Combine cornmeal and seasoning in a bowl.
- Pat haddock filets dry with a paper towel.
- Sprinkle both sides of each filet with cornmeal mixtures to coat.
- Bake in preheated oven for 20-25 minutes, or until fish is fully cooked and flaky.
I served my haddock up with some roasted broccoli that I sprinkled with some of the seasoning as well. I love the combo of citrus and seafood, and adding the cornmeal gives it a crispy texture that mimics frying without the unhealthy fats and calories.
I also got some extra tips on ways to use a lot of the different products, and I thought I would share a few of my favorites, as well as some that I personally did:
-Sprinkle True Lime on popcorn or tortilla chips.
-Make flavored ice cubes.
-Sprinkle True Lemon on apples or avocados to stop browning.
-Add the Orange Ginger seasoning to tuna fish.
-Sprinkle in True Orange to your hot tea, or True Lemon in green tea.
-Add to homemade salad dressings.
Now that I got you all hungry, let’s talk nutrition! I mentioned I got to ask Diane, the nutritionist for True Lemon some questions, and I thought I would share some of her insight with you.
I think it is a growing trend for major companies to hire a nutritionist, but it is awesome to see True Lemon ahead of the curve and offering a lot to their consumers and the public.
Being the curious and excited young dietitian I am, I was thrilled to be able to pick Diane’s brain a bit with a few questions. Here’s our Q & A sesh:
How did you get involved with the True Citrus company?
I received a packet of True Lemon in the mail and was completely floored by the product and knew that I had to be involved with promoting it! I contacted the company, requested more samples which I gave to all of my patients, clients, family…everyone I came in contact with. I then presented opportunities to True Lemon to sponsor my appearances at food festivals, supermarket tours, womens events, media appearances, cooking classes, etc. To this day, many years later, I am still working with True Lemon and their biggest fan!
As a fellow RD and blogger, do you feel it is important for more dietitians to become involved in blogging and social media?
Absolutely! Social media has become a fantastic platform for us as RD’s to spread the word about healthy eating and living. We can reach the masses with the click of a mouse.
What’s one of your favorite recipes or ways to use any of the True Citrus products?
True Lemon, Lime and Orange are staples in my spice cabinet. With just a shake you have natural fresh citrus for cooking. The variety of lemonade flavors and iced tea are always prepared and in my fridge and my entire family loves them. It’s difficult to pick a favorite so go to truelemon.com and there are many recipes that I have created using True Lemon products. I literally use them daily for everything!
Any recommendations for becoming a company dietitian such as yourself?
Find products you are passionate about and contact the company…don’t be shy and go for it! Only work with and endorse products you truly believe in. I have turned down numerous big money making opportunities with companies that make products that I wouldn’t recommend. Don’t ever “sell out”…integrity is the key to success and satisfaction with your career.
