Fabulous Fridays: Emily, RD
Happy Friday! It sure is fabulous right?! Right. Okay I can’t wait any longer. Mine is especially super dooper fabulous now that I am officially a Registered Dietitian!
Yes, the 5 years dedicated to glycolysis, diabetic exchanges, and parenteral formulas I can now (legally) call myself a nutrition expert. This is such an accomplishment for me to know that all of my hard work and dedication has finally paid off. I have been waiting for this moment since I was about a junior in High School, and now that it has finally come it feels like a major weight has been lifted off my shoulders. If only it actually made me drop a couple pounds, but hey the metaphor is good enough for me. Granted I’ve replaced this with the weight of a new job, but I am still so thankful to have gone through the schooling, internship, and national exam to bear the prestigious RD after my name.
I of course celebrated by going grocery shopping after. What did you really expect from a foodie RD?! Nothing makes me happier than buying my Jicama on discount for $1.00 and browsing the fro yo aisle. I settled for Extreme Cookies ‘N Cream for health reasons, obviously. I did also meet up with some friends for a celebratory drink and free chips and salsa. Pretty much the only reason I go to a Mexican restaurant for drinks. Gracias.
Now that I don’t have to dedicate my days, nights, and weekends to Jean Inman…well I don’t even know what to do with myself! Luckily my new pal Laura shares my pain and some RD humor with me after recently becoming an RD as well. I can’t wait to host a roundtable with her at the Healthy Living Summit, especially now that we are both RDs!
Now I’m off for one more training day for work, followed by my annual 25 mile bike ride with Papa John this weekend, celebrated with an extra large ice cream cone. I’m so happy that I feel like I resemble this…

I’ll take it. I’m one happy gal right meow. Excuse me while I start a bonfire with all of my study materials. Happy Friday!!
