So you survived the hump and now it’s on to the slump. Thursday. I used to have other mildly inappropriate names for this day of the week, but I have matured into saying it’s a stupid turd face kinda day. It’s not yet Friday, just a teaser of a day until the sweet smell of weekend air is upon us.
Normally I would say that there is nothing good about Thursdays, except for the fact that I am posting on a Thursday so there must be something good to come out of it. What’s that you say?

Now here’s a riddle for you just to make your Thursday supper dooper strenuous.
What’s sweet and cold with two ingredients?
Muh freezer fudge!
I got the idea from one of my fav (and fellow RD) bloggers, Robyn and had to give it a whirl. With a jar of Good Karma staring back at me with longing eyes, I knew just the ticket to turning my Thursday frown upside down.
- ¾ cup Good Karma Vermont Peanut Butter (or vegan chocolate peanut butter)
- 2 tbsp virgin coconut oil, melted
- Combine peanut butter and melted coconut oil in a bowl.
- Divide evenly into an ice cube tray and freeze at least 2 hours, preferably overnight.
- Pop fudge out of tray and store in freezer-safe container in freezer.
2 ingredients. And one is peanut butter. And 2 grams of sugar per piece. Wanna take a stab at how much a typical piece of chocolate fudge has? 12. 12 grams of sugar, that’s 3 teaspoons in ONE piece. Meaning I could have 6 pieces of this version for the same amount of sugar. I’ll take that as a challenge.
I used an ice cube tray to easily make them into even portions..and so I wouldn’t be tempted to call the entire pan a “serving”. And less time spent cutting/chopping/ demolishing before it makes its way to my eager stomach.
Thursday official made. And you best believe I didn’t waste a drop of that hot mess.
I think my freezer and I will be having dates every Thursday night for the next few weeks now.
